My mix is from top left.
3 T kosher
2 t sugar
2 t rough ground caraway
cure 1
2 t black pepper
2 t nutmeg
Mix all but the cure together.
The cure i added to 1/4 cup distilled water, then into the meat.
I been finding that folding in the dry to the meat is much better than over mixing.
In the fridge, no time for stuffing or smoking. Using sheep casing tomorrow.
