My mix is from top left.
3 T kosher
2 t sugar
2 t rough ground caraway
cure 1
2 t black pepper
2 t nutmeg

Mix all but the cure together.

The cure i added to 1/4 cup distilled water, then into the meat.

I been finding that folding in the dry to the meat is much better than over mixing.
In the fridge, no time for stuffing or smoking. Using sheep casing tomorrow.

Nice . I made a 2 pound batch same time as you couple weeks ago . Gone . Got a six pound butt to do some more tomorrow .
Noticed in some of your threads , you skip the water bath . I'll be doing the same this time . Interested in how long you let them hang . Watching .

Wow that looks great!! How did the sheep casings work? I have heard they are a little more challenging than hog. Nice Job!
