The Beef Ribs -

They all had some hard fat that I trimmed up pretty well...





Rubbed down with... 2 Plowboy Bovine Bold, 2 with SM Cherry.

Royal Oak and Cherry chunks..



The Pork Ribs..

Also SM Cherry...







Now I have some Chicken quarters on with SM Cherry (seeing a theme here??) and one with Dizzy Pig Swamp Venom.
