It has been a few months since I've done some jerky. And while I was at the store yesterday I wanted some. I just didn't want to spend 7.00 on a small pack of decent jerky.
2 London Broils. Just a smidge over 5 pounds. At 3.50 a pound
After trimming and slicing I got 4.9 pounds.
Bagged and ready to sit for 24 hours.
The recipe:
5 pounds beef. Eye round or other lean meat.
1.5 cups soy sauce
5 tbs worcestershire sauce
2.5 tsp onion powder
1 tsp garlic powder
5 tsp course black pepper
1/2 tsp red pepper flakes
7/8 tsp cure
2 tsp liquid smoke. This will be oven jerky. Omit if you are smoking them.
Now, since I wanted this batch to have some heat.
I got some spice packs from my good friend Robert aka @tx smoker. Let me tell you. This stuff is lightning in a bottle.
I used 1/4 tsp of each. Doesn't sound like much. But after a few uses of this stuff I know better.
Put on the jerky trays. And into the oven set at 170 degrees. Now the wait begins.
