It has been a few months since I've done some jerky. And while I was at the store yesterday I wanted some. I just didn't want to spend 7.00 on a small pack of decent jerky.

2 London Broils. Just a smidge over 5 pounds. At 3.50 a pound

After trimming and slicing I got 4.9 pounds.

Bagged and ready to sit for 24 hours.
The recipe:
5 pounds beef. Eye round or other lean meat.
1.5 cups soy sauce
5 tbs worcestershire sauce
2.5 tsp onion powder
1 tsp garlic powder
5 tsp course black pepper
1/2 tsp red pepper flakes
7/8 tsp cure
2 tsp liquid smoke. This will be oven jerky. Omit if you are smoking them.

Now, since I wanted this batch to have some heat.

I got some spice packs from my good friend Robert aka @tx smoker. Let me tell you. This stuff is lightning in a bottle.
I used 1/4 tsp of each. Doesn't sound like much. But after a few uses of this stuff I know better.

Put on the jerky trays. And into the oven set at 170 degrees. Now the wait begins.

Looks good Steve! I enjoy making my own a lot. I have an Excalibur dehydrator that’s just a beast when making large batches.

70 or 170?

Looking forward to the finished pics.

Thanks Xray. Typo. Adjusted. It is 170.

Looks good Steve. Little heat and its usually mine as the wife doesn't care for. Ha. . .

Jerky looks great Steve! How long does it take at 170 in the oven? They run London broils on sale around here $2.99lb seems like about once a month. Gonna have to look for the habanero powder!

Thanks! I just pulled from the oven. It took 8 hours to get done. Now cooling on a rack. Robert got the spices from The spice Merchant in Kansas. It is HOT!!!

looks good Steve, I copied your recipe so I can try it, minus the heat.
