Hello. John Clow here.  I live in La Ceiba, Honduras.   I have been wanting to take up smoking meats for a while and decided it was time to quite using 'no time' as an excuse.  I have been doing simple stuff with a cheap charcoal grill and hickory/mesquite chips I found in a store here. I am anxious to try some of the native woods here. I know most fruit trees are pretty much good to go. Mango, Lime, Orange, Guava, Star Fruit and some others are all found local here... some in my yard. I am looking at buy a Char Griller Trio online and having it shipped and/or making my own smoker.  Any sharing of experiences or knowledge would greatly appreciated. I look forward to interacting with some of you.
