Was crazing the meat cooler this week, ie my usually look with no real intent to buy….. when lo and behold I spy a very meaty rack of back beef ribs…… so I reached out and snatched the the un-expected gem….

Seasoned them up with a splash of woster and some kinder…..

On the RT 1250 at my go to temp (265) for beef ribs……

Progress check…..2 hours in…..

3 hours in…..ready to wrap and rest….. I don’t INT these, my time tested cook is 3 hours at 265, followed by holding it covered for a min of 30 mins…..

Bingo after 30 mins wrapped in foil and held at 140 in the house oven…..

Sliced up and joined with some herb butter roasted baby roots…..

Oh man these were so enjoyed….meaty and pure beef money….. it’s been too long since the last cook! Money!
