A builder called me when footprint of a new house required a pecan tree to come down. Now I have about 300 pounds of chunked dried pecan for smoking. I used up three Brinkman smokers, putting thin "planks" of pecan directly onto the heating element. Now I have one of the electric fully-enclosed smokers and need smaller splinters of wood for the hot chamber.
Cool weather makes possible smoking ducks and hanging up whole hams under cure. My junior son likes to cook smoked duck and oyster gumbo for Christmas. This year, for the first time in 20 years, we will cure, smoke, and cook a Maryland Stuffed Ham. Will use the pecan wood along with a chuck or two of green sugar cane to get the correct flavor. Good things are happening along the Mississippi Gulf Coast.
