My name's Keith, and from the title you can guess that I live in Oklahoma City. Only been here 5 months - residency courtesy of the US Air Force.

I have a MES 40 with an AMNPS:

Already did the Sam's Club steel cart mod as you can tell. I used to use a cheap Charbroil offset horizontal smoker for about a year before I moved to OKC. Gave it away during the move.

I guess as far as skill level goes I'm just a raw beginner compared to someone on the competition circuit, but I think I might be better than some others - but that's all because of the lessons learned on this forum. ;-) But I think it's mostly due to the AMNPS and the MES 40 - with those, making decent smoked meats is falling off a log easy.

I used some seasoning I bought at a gun show called Mike's Seasoning - I like it a lot.

I learned about making fatties, smoking shrimp, and found out about Todd and the AMNPS from this forum, so I'd like to say thanks to everyone!

Good to see you here.  I live over in Midwest City.  That cart looks a lot easier on the back to use.

AustinL - the cart certainly is! I used to have to get down on the floor to load the AMNPS and the bottom rack. Now I just have to bend over a bit. The side shelves are *extremely* convenient, especially for resting a cookie sheet on. I was surprised at how sturdy the shelf is - it won't hold 100 lbs, but it could easily support a 12 lb brisket or so.

Scarbelly - Thanks! I like it here - no rudeness and an incredible amount of information. It's amazing - I would not even have a smoker if I hadn't found this place. Sure, I first got the smokin' bug reading the Cookshack forums when I was stationed in Korea, but the board is limited to one brand (nice place, though).

I need to give a big thanks to Todd - he really helped me getting a AMNS when I was stationed overseas, and his customer service is nothing short of amazing. I really hope he's doing good buisness, he deserves it!

Just ,looking at your Smoker ,Nice , but you don't look big enough... Eat some meat . LOL

oldschool - believe me, it's difficult to not be large! Unfortunately mother Air Force will kick me out if I don't maintain a near bean pole body type. And considering I'm not a teenager anymore, the amount of exercise needed to burn it all off leaves me a bit hurtin' sometimes. My other hobby of homebrewing does not help my waistline at all...
