Hi all.  Just joined a couple of weeks ago, but just getting around to speaking.  I am a beginner when it comes to smoking, but hope to obtain a lot of information from this site.  Thanks in advance for all of the help!

Probably should have listed my smoker.

I have a MasterBuilt Digital Smokehouse that my wife gave me as a gift.  Even though she didn't say, I think she wanted me to start on something small before upgrading to a larger smoker.  So far, it has served me well.

Welcome to a fellow Texan!  This site is great. You will be able to find all the information you need right here! Ya need anything just ask!

That is mighty kind of you.  We live in the Humble area, so you are not that far away at all.

Thanks!  I am a fan of free, so I will try it out.  I 'lurked' on this website and a couple of others and learned a few things to make my baby back ribs taste like I was an old hand the first time.  The second time, they were so tender, they were impossible to cut and keep neat.  I have since learned how to fix that from some of the things I have seen on here.  Looking forward to learning a lot more.  Thanks again.

You'll be smoking like a pro on that MES. You might want to check out the Amazing Smoker. Used in combination with a MES, it makes it real easy to get consistent smoke.
