I got in on  a good sale on whole porkloins(99ct a lb) and got 6 of them. They weigh 9-11lbs no bone but not a lot of fat. I generally rub and smoke these then vac pack which it is fantastic. But now I have started making sausage I would like to use some for that. How much pork fat should I add to get a 80-20 or 70-30 mix.

There are people here that can give you better advice than me but what I use is bacon ends and pieces.   Where I live the bacon ends and pieces are sold in a 4 pound package for about $8.00 and it's mostly fat.   I use 2 pounds per 10 pounds per 10 pounds of pork lion.    That makes a leaner sausage than a lot of people make but it works good for me and makes a really tasty sausage.

This helped me a ton when I started and it should work for you.

Easy no math figurin'...10 pound 80-20 = 8 pounds Loin and 2 pounds Fat. 10 pound 70-30 = 7 pounds Loin and 3 pounds Fat. Or search for Fat to Meat % Calculator Formula for the post with the math for large odd size weights of meat...JJ

If you use "bacon ends and pieces", I like separating out the meat from the fat...   use the fat for the sausage, weigh it for an improved %fat number, and save the meat for beans etc....  Just a thought...
