Wow! Thought look great! The latkes are a great idea. I have a Polish cookbook with a version that calls for a layer of seasoned bread crumbs on top of the mustard before adding the pickle onions and bacon.Thanks again for the inspiration! Tried a version of these tonight! Coupled it with a packaged latke mix, sauerkraut (with some borscht mixed in). Mighty fine. New to me. I love the interesting recipes I encounter on this site!

I made it but went light on the breadcrumbs. Will try that recipe again soon.
I prefer sauerkraut over red cabbage!
