Got an ECB as a gift a few years back. Finally tried it last year. Store bought salmon with hickory & a few different flavors - plain, honey, chipotle & peach jam. (chipotle disappeared the fastest). Turned some chicken breasts into hockey pucks next - temp ran away while I wasn't watching - lesson learned. Then I tried some trout that the kids caught (oak/creole seasoning) - tasty! A few Weeks ago a friend turned me on to this site & I decided to try a turkey. Had a little trouble getting the smoker to temp in the beginning but once I had enough lump burning, it went smoothly. Two identical birds were served - standard oven & my injected, peach smoked bird. We're still eating the oven bird - the smoked one disappeared at the table. My most recent smoke was elk jerky from some round steaks I had in the freezer. Sliced them a quarter inch thick & soaked in brown sugar/honey/garlic concoction overnight. Smoked at 190 deg with peach wood. They were looking really good after two hours, but I had to leave for a Bronco party. (I'm in Colorado, by the way.) Instead of finishing in the oven, I opened the door, cracked the lid & hoped for the best... Upon my return, I thought I had more hockey pucks due to the almost black color, but after trying some & sharing with the family, we decided that it wasn't too bad. We actually ate the rest tonight.

Long story short, I'm thankful to have this site & the great info available on it. I'm going to try some appetizers this Thursday (Another Bronco game) & keep on trying new things down the road.
