I got a new Traeger and have started smoking again.
I used to have a smoker that I had to feed the wood into every 20 minutes. Needless to say a 10 hour smoke was a commitment. I used to go chop some olive wood and or almond wood and work the smoker all day.
Now with my Traeger it's much less hands on.
I live in Israel and it is pretty hot over here.
I have started smoking whole chickens on a weekly basis for the locals here and they love it!!!
I've also smoked brisket a couple of times in the Traeger, it came out delicious but still have lots to learn about the nuances.
