I've been researching and viewing the forum here for a bit and am ready to plunge into the wonderful world of smoking.
I've got a MES 30 and just completed my mailbox mod. I'll upload a photo of it soon.
Will be using the mod for the first time as I start a pork butt for our Le Mans 24 hour party this weekend. Will open a new thread for that after I get some photos of my prepped pork.
I also grabbed some cheese recently that I'm storing till the Florida weather cools in December so that'll be my first cheese smoke.
