Hi everyone,
As the title says, I'm smoking meat, fish and vegetables in Scotland, dodging the rain in this disastrous summer we're having.
I found you guys when I was looking for a pork tenderloin recipe, and I reckon I'll hang around!
I'm using small logs in a horizontal offset smoker, a copy of a rumo chuckwagon, but I'm going through wood at a huge rate, so I reckon I'll have to look for a more economical alternative to the logs, maybe sawdust on a steel tray above charcoal? Good to be here! :)

Hiya Stuartieboy how are you doing?  I have an Brinkmann offset and they can be  very hungry for the logs.  Your other options are chips or chunks which will be a bit more economical.

There are some fantastic people on here with some great experience.

As smoking has gained popularity in the UK we have been given our own group, UK Smokers. We still come under the watchful eye, and have plenty of support from our american cousins, but somethings are different in the UK and that's where the UK forum comes into it's own.  

We have members from both sides of the pond so it you post a question in the UK Forum, there is a good chance it will get answered from both the UK and the US.
