My Name is Matthew. I am about 2 years into the Competition world. This will be my first year where we are competing throughout the whole year. I cook on an El Rey Smoker which is an offset. It is double wall insulated.  In previous years I have made several final tables with top 10 in ribs and Chicken. Brisket is still a work in progress!!   We are doing our first competition next weekend.  One question I do have is how have some of you dealt with really windy competitions. We are projected to have 20 to 30 mph winds during the competition and I am trying to best figure out a way to fight the wind so my smoker is not all over the place. Glad to be here. Looking forward to hearing from all of you!!!

I've found that if you put the firebox into the wind you get a better airflow.
