My Name is Matthew. I am about 2 years into the Competition world. This will be my first year where we are competing throughout the whole year. I cook on an El Rey Smoker which is an offset. It is double wall insulated. In previous years I have made several final tables with top 10 in ribs and Chicken. Brisket is still a work in progress!! We are doing our first competition next weekend. One question I do have is how have some of you dealt with really windy competitions. We are projected to have 20 to 30 mph winds during the competition and I am trying to best figure out a way to fight the wind so my smoker is not all over the place. Glad to be here.
