help, obvious newbeeee w/ pork ribs

I just got my GOSM Big Block, am seasoning it now, and plan pork ribs tomorrow. I found Save mart had spareribs for $.99 a pound. When i got to the store, I saw they were pre cut into 1 pound pieces, so I opted for 4 1/4 pound racks at $1.49 a pound.

1. Would you ever smoke the pieces with like a 1-1-1 method ?

2. My racks are a little bigger than the usual 3 1/2 lbs I read about. Should I try for a 3 1/2-2-1 method? I will watch for the pull off the bone approach also.
 
First, welcome to SMF jon3000! Glad to have you aboard.

Now for your question. I have cut racks in half ...froze one half, smoked the other. Still cooked them the same way except maybe use a 2-2-1 or a
2.5-2-1. But I always looked for the "pull".

For the full racks, them thar thangs are goodens! Sounds like a true 3-2-1 would work. I would spritz them after the first two hrs, then after the 3rd before I foil them. Alot of meat on racks that large.

Thanks Geoff, my wife went on her own and bought some racks pre cut into pieces. I guess she is excited as I am. I will freeze those and follow your advice next time...

Good luck again jon. If you do get into this lifestyle (that's what I like to refer to it), I would highly suggest you invest in a vaccum sealer, something like the "FoodSaver" or like brand. Well worth it for when the sales go on.
