New to this, I've been working in the food industry for a while, Im a student of the art, great bbq and smoking meats is what I am interested in... I want to learn more,I huilt a brick smoker from blocks and it seems to do the trick for now, I can cook really well but now I am interested in learning about the differences in the wood and how to use it as a seasoning and cure... I can butcher and cut fish, there isnt anything I cant cook, I want to understand this craft better...
