Started lurking around here about 10 years ago on advise from a co-worker after I bought an MES30.
Upgraded about 2 years ago to a gravity fed and love it.
Getting interested in home butchering and curing and smoking for no refrigeration storing of meats, but a little apprehensive even though I know it's been done for thousands of years.
