I have to add the Eastern part because of the difference between Eastern and Western styles of BBQ in NC. Being a Eastern guy, I grew up on whole hog, vinegar based sauce BBQ. I have a home made pig cooker set up for direct grilling. (Pics coming). I'm looking at building a UDS in the near future.
