Two weeks into owning this Yoder 640S and I've now done ribs, ABT's, whole chicken, stuffed burgers, tri tip and now some chuckie burnt ends. I should of got pics of the tri tip, that direct grilling option on this Yoder is amazing. I was hitting near 800°F at the grates for the sear.
First time trying this, picked up a 3lb and a 2lb choice boneless chuck roast at Safeway, $5.69/lb
Rubbed with Trager chili garlic rub and extra CBP last night about 11pm. Put on the smoker at 235° pit temp at 7am this morning. They stalled at 165 for a while and I finally wrapped them in foil about 3pm worried about dinner time and they shot up to 190° by 5pm and I pulled them to rest.
Rested for 1 hour wrapped in foil and covered with a towel on the counter. Then I cubed up added some more of the same rub plus 3/4 cup coca cola, 1/4 cup beef broth, plenty of BBQ sauce (sweet baby rays cut with cider vinegar and sirichi sauce plus more CBP) and tossed the cubes in the mix. Covered pan with foil and put back in the smoker at 295° for 1 hour. Uncovered, tossed cubes again and left in for another 1/2 hour.
Dinner served at 7:30pm - hope you enjoy the picks, they were delicious!
Was happy with the bark achieved here
AMNPS helped out on the smoke ring
Cubed and ready for saucing
Ready to serve
I'll have to admit I'd already eaten quite a bit along the way by the time this pic was taken :)
