I am Josh and am from lower Alabama, WAR EAGLE!!!!  I have been a meat cutter for 15+ years and in the past 8 years i have been slowly building a part-time deer processing business.  It has grown to the point where I am about to start my 2nd season full-time.  My smoker is an upright freezer that i converted.  I use both electric and charcoal, everything is in the freezer with no outside box.  I hope to gain new insights, learn new things, and also share some of my knowledge while here.
