Been in Thailand since ’99 and live in the boonies. I wanted some home cooking and a few years back made a pizza oven after attending YouTube University. What started out as a hobby became a business for my wife and every Fri-Sun, we are generally jam-packed.

Anyway, our smoked ribs are also popular and am thinking of learning how to smoke brisket. And that is why I joined this forum as I don’t know squat about smoking brisket.

Greetings. Another huge Thia food fan and cook. If you peruse the forum, you'll see a lot of threads on brisket. Also, Youtube has some very good videos on cooking brisket.

Smoking Brisket: if you can get full packers (flat and point still connected), use that! Run bit, probe the flat and the point, smoke it at 275 till probe tender all over. They take a long time, there will be a stall around 160,stay the course.
