Hi all,

My name is Raymond and I live in the Seattle area. I just did my first burn in on my new Yoder YS640.

Still not 100% sure what my first cook will be but I'm thinking some chicken. I do a lot of fishing here in the north west, so I am stoked to get some salmon in the chamber here soon too. 

I'm not new to smoking, in fact my first ever job was working at Branks BBQ in Sumner WA and this is where I caught the bug. :)   

I also plan on doing a lot of cold smoking: Cheese, nuts, fish, peppers, ingredients and the sort. I love to instill some smoke into semolina flour then use it for fresh pasta and pizza dough. 

I'm a big fan of long cooks too, so some brisket and pork butts will be in the near future... 4th of July maybe. 

When I'm not cooking or fishing I love to golf (drink), tool around on my car (Ima VW guy), working in the yard, playing video games, hike and chill with my wife and our two bulldogs (Ransom and Ruffles) 

I already have some mods in mind for the unit but I will hold off until I get a few cooks in. I have been thinking a lot about building a little outdoor kitchen and when I do the unit will be built in but that's not going to be this summer (I don't think). I will do a build thread when I do. 

Anyway- I look forward to being apart of what seems to be a great community forum.
