Hello, Patrick and I'm located in the NE part of the state. I have been smoking for some time now, I use a Traeger smoker and I try to smoke at least once a week, smoking two pork butts this weekend. Also a big fan of SV cooking.

Welcome to the forum! I try to use my smoker as often as possible as well. I recently got the Anova SV cooker and have been playing with that.
