I was married into the world of smoked meats!
Yep, I married a girl of German decent from the Hill Country of Texas.... specifically the Blanco area. Her grandmother came over on a boat, just before WW2 and married a Texas Boy that fought on the shores of Normandy. Anyway, they were a family that was property rich, but money poor. They truly lived off the land with massive gardens every year and Whitetail Deer filling the freezer. Most of their venison was produced into a smoked sausage, with a recipe that came from Germany.
I just finished building my little smoke house and plan to carry on the tradition, as I can eat pounds of that smoked Deer Sausage every week... !!!!
I look forward to learning more on this forum.
