Well, I thought I'd say hello from central Illinois.  I'm an avid bbq lover and have smoked food for quite a while now.  I got my dad interested into it as well.  I've also made a curing chamber but failed on the first go around.  (making a small fix and will try batch #2)  I made my own smoker several years ago and am about to embark on a pull behind RFsmoker.  Thanks again to all who post--I really enjoy reading the threads.

Meat and 3,
Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

Looks like you have some serious smoking equipment and the experience. So just jump right in and share! What went wrong on your first try in the curing chamber? Wish you better luck on the next batch!

Always remember the only dumb question is the one you don’t ask!!
GO BUCKS!!
Keep Smokin!!!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
Happy smoken.

I made a curing chamber out of a small fridge and like many people have mentioned--it stayed really humid. I have it set up to control heat/cool/humidify but not to dehumidifier. After recently viewing some threads on SMF, I ordered a small speed controlled computer fan. I feel pretty confident on the next go around-I'll know soon
