Long time wood oven baker who converted a failed early fieldstone oven to a smoker.
i am so glad to find this site. Reading the posts is helping me a lot. I just started smoking in December.. I’m cold smoking with dozey maple and ironwood in the firebrick oven chmber ,the cold weather and masonry mass keep my smoke chamber cool ..no worries today high -14c ..
So far I have done a chicken spatchcocked, baby back ribs ,sausages and salmon .
All have been a mouthwatering success …admittedly my first batch of salmon fillets were too salty .
Im keeping notes and reading posts and enjoying the smoked results
