Hi everyone. I'm only about a year into the world of smoking, tried out a few different cuts of meat so far and I'm always looking to improve my craft. The avatar is from my first brisket (waited about a year to try it) - cooked a little quick, a little overcooked, but not too bad. I read about masterbuilt modifications here so I now have a recently modified Masterbuilt propane upright. I've only smoked some simple stuff (brats, kielbasa) since those changes but I can tell already that it's going to be much better than it was before. I appreciate the advice so far, now it's time to officially join y'all and maybe I can help out a newbie or two by learning from my mistakes.
 
Thanks for the welcomes! You're absolutely right Ray, there's amazing smoked meat everywhere around here and I try to test it as much as I can in the name of research. Same with you Blue, the more stuff / mods I try the more I learn about it. Had trouble getting it to go lower than 250, then read where the stock temp gauge wasn't the best so I installed a better one as well as a nomex gasket and RTV. Great seal now. Still hotter than I wanted. Installed a needle valve and that took care of it. 185 stable now, yet to try it on a long smoke, but worked great on some smaller 1 hr stuff. Thanks to all!
