Heavy rainy weekend = Pickle time Sept 2026

Well it is pickle time here in NS,
Heavy rain for about 4 days started Thursday, so i made time to start my pickles . As last year did not have time .

18 bottles of Bread and Butter , 12 bottles of my Sweet Mustard pickles.
So made few batches of each so far,

The Bread and Butter : cucumber, onions red bell peppers sliced at 1/8". boiled and in a bath for 10 minutes at 180deg - 185 deg any hotter and your pickles will be soft.

Sweet mustard : cucumber and onions chopped at about 3/4" pieces. Boiled for 10 minutes and straight into the bottles and store after the tops pop.

Both are shelf stable for about a year.... never last that long around here. ( Plus Mona likes to give them away to who ever asks ) can't fix kind hearted I guess.

And had about 2 1/2 bottles of the mustard sauce left over , so also stored these for other cooking recipes , pork roasts, chops etc.

Now to get to my jellies and jams, Grape , plum, and jalapeno and mint or maybe forget the mint part and just make Mint

Plus have to do something with all the Pears , And some more Swiss Apple Pie jam must be made this year also.

Well better get back at it ,

Have a good long weekend , it is raining here all weekend , but we do need it , I guess.

Get your bottles cleaned and your knives sharpened, and have at it .

Thank for the post on the pickles. The last time I tried to make a sweet/hot pickle they were soggy. I never knew (nor does any of these pickling supply sites said) not to get the water over 180 deg. I guess that is why grandma never water bathed pickles. Very hot brine and scorching hot jars.
 
HI David, those look amazing! I want to make some a while back but couldnt find pickling cucumbers and gave up.

I have posted the recipes before if you would like, let me know.

As for the Band B, the sauce is boiled then add the pickles and just bring top a almost boil, then the water bath.

The sweet mustard are like your Grandma, boil sauce for 5 minutes, add all veg and bring back to boil for 10 minutes,and then into very hot jars and lids , and let sit until the pop.

both are shelf stable for at least a year if they last that long. :emoji_sunglasses: 🤠 :emoji_sunglasses:

You are so right there, and the ladies here are going crazy over them already as it has been 2 years since I made them last. Too busy last year. looks like I might have to hide a couple just incase they don't slow down on them ,lol

HI David, those look amazing! I want to make some a while back but couldnt find pickling cucumbers and gave up.

They really are, for the 2 types of pickles that I just made I find the best cukes are just really fresh field cucumbers. the fresher picked the better.
