Well it is pickle time here in NS,
Heavy rain for about 4 days started Thursday, so i made time to start my pickles . As last year did not have time .
18 bottles of Bread and Butter , 12 bottles of my Sweet Mustard pickles.
So made few batches of each so far,
The Bread and Butter : cucumber, onions red bell peppers sliced at 1/8". boiled and in a bath for 10 minutes at 180deg - 185 deg any hotter and your pickles will be soft.
Sweet mustard : cucumber and onions chopped at about 3/4" pieces. Boiled for 10 minutes and straight into the bottles and store after the tops pop.
Both are shelf stable for about a year.... never last that long around here. ( Plus Mona likes to give them away to who ever asks ) can't fix kind hearted I guess.
And had about 2 1/2 bottles of the mustard sauce left over , so also stored these for other cooking recipes , pork roasts, chops etc.
Now to get to my jellies and jams, Grape , plum, and jalapeno and mint or maybe forget the mint part and just make Mint
Plus have to do something with all the Pears , And some more Swiss Apple Pie jam must be made this year also.
Well better get back at it ,
Have a good long weekend , it is raining here all weekend , but we do need it , I guess.
Get your bottles cleaned and your knives sharpened, and have at it .
