I have a couple of turkeys I need to do something with was considering grinding them up and making turkey jerky or snak sticks! any one done this and do u grind the skin?

I've made a lot of ground turkey from whole birds and I don't grind either the skin or fat, trying to get it as lean as possible.

How about turkey or chicken snack sticks? If there are any ideas on that please do share! Trying to make my Grandma a good non pork sausage / snack stick recipe because her religion doesn't allow pork.
