Kroger has brisket $3.99/lb last week. I bought 2, 1 for hamburger and one to smoke.
Ended up vacuum sealing 11 1lb packs out of a $45 brisket. The LEM #8 did a good job grinding after I put the auger and fixtures in freezer over night. Meat was pretty frozen too.

Yep, the Kroger nearest me has them too and I do the same. Trim as much fat as I can then weigh and add enough fat back in to make about 20%-25% burger. Rest of the fat gets rendered for tallow...
 
Nice work ! If the price is right , it's a great way to do it .

I started doing all my ground beef in 2019 . It's all so expensive now I stopped doing it .
If I could get brisket at that price I'd stock up .

I never freeze grinder parts . Causes problems or even equipment failure in my opinion .


I usually just chill well in garage fridge that is struggling in our recent heat and humidity wave.
I bit the bullet and just bought a garage ready fridge / top freezer before this weather hit .
Been a huge difference so far .

That is in the near future.
My garage fridge is around 45 years old and still working well. The upright freezer next to it is around 35 years old and outside of needing a good defrost works well.

Same here . Kenmore Elite ( Whirlpool ) I bought at Sears outlet for 500 bucks when I was 25 .
Still doing the job 40 years later . Cleaned up , just needs some paint . Then it goes downstairs .
Never put much thought into garage ready , but I see a difference in control settings and construction .
I got this at 50% off for $17.00 .

Next time you grind , grab a pork butt . Make some bulk breakfast sausage , and use some to extend the beef grind . I also use the pork grind for taco meat . Works great for that , and half the price .

Indeed. They are selling more 50% beef/pork mix than ever now. MUCH cheaper for them but the price they charge is only about 10% less than 100% beef :emoji_angry::emoji_angry::emoji_angry:
