Got gifted some fresh Marlin by a friend and decided to add some shrimp kebabs and grill over some wood coals. I seasoned the Marlin with a mixture of olive oil, salt, pepper and the most important ingredient, S&B Nanami Togarashi spice. Came out really good!

Looks great!

A number of years back a buddy of mine and myself brought back each a half a striped marlin from Mexico. We were in the Navy and went to Cabo San Lucas for a very nice liberty port. I tried a few different ways to cook the meat up. Keep in mind the internet wasn't up and running yet, so trial and error was the only way. Finally figured out a way that was a winner with the wife. Use a teriyaki marinade for about an hour, throw on the grill with some pineapple rings and a teriyaki basting sauce. I would us the baste on the pineapple rings, too. When done top the steaks with a ring and serve. Wife loved it and so did everyone else that had it. What seemed like an endless amount of marlin ran out way to quick, though.

Cool story and thanks for sharing. I will try a teriyaki marinade next time. A few years back we went tuna fishing and brought home a 150lb yellowfin which we shared between 3 people. Let's just say, we ate a lot of tuna!

"Japanese salted chicken wings...." that sounds really good! I like anything chicken wings!

That looks beyond phenomenal, very nice job! I’d make that plate disappear for sure… that had to be so tasty!

So, in another thread I seen you are from South Africa?

Due to my friend Rick @BGKYSmoker who introduced me to Biltong and Chilli Bites… which are amazing! And now a staple in the house!

I also ventured out and looking at SA cuisine… made some Boerie Balls with some Pap and Sheba… very tasty!

My next few things when life slows down enough to do is some Boerewors and Sosaties on the Braai! With maybe some Pap and Chakalaka to go with it!

And this winter, I’d like to try some Potjiekos… Ben Kruger made it look so tasty!

Welcome to the US, and look forward to learning more on your SA roots!

Thanks for joining us!

Hi Rafter!

So glad you got introduced to biltong as a feel bad for the people missing out! I really mis boerewors! I don't have all the equipment....yet.

The first thing I did when I moved over to Texas was to build my own "Biltong Box" to dry the meat. Biltong is one things I cannot live without. Here is a picture of my latest batch. It's so easy to make.

My favorite sosaties are curry lamb sosaties. In south africa we braai a lot of lamb. I will be sure to post my biltong recipe and method in the "Jerky section" as well as share my curry lamb sosatie recipe.

Yes, potjiekos! Another absolute winner. Like you said can't wait for cooler weather to make some potjiekos. This Houston heat is just ridiculous and sucks the life out of you...

That is a beautiful plate of goodness… Do you do your own recipe? I’ve been using Crown National for both Biltong and Chilli Bites.
