Nice! To be honest, I’ve always made it by taste and consistency rather than following exact measurements. The ketchup forms the base of the marinade, followed by lemon juice, olive oil, hot sauce and Robertson Portuguese Chicken spice. If I had to guess, I’d say roughly 5 parts ketchup, 2 parts lemon juice, 1 part olive oil, and 1 part fermented hot sauce.Congrats on the ride! Well deserved. Bought the seasoning. Any chance you will give us some approx size of ingredients? I got an idea just want to confirm.
I don’t season the chicken at all, I only apply the marinade.
I probably use about a tablespoon of Robertson’s Portuguese Chicken Spice, followed by salt and pepper to taste. The Robertson’s spice already contains salt, so go light on the salt if you want to add any. I like garlic, so I usually crush 3–5 cloves, depending on their size. Good-quality, 100% natural tomato ketchup is important. Don’t use stuff like Great Value Walmart ketchup. Sometimes I also add a dash of Worcestershire sauce.
The key with this marinade is keeping it fairly thick and not too runny. You want it to really stick to the chicken and stay on while it cooks. As mentioned before, it can burn quite easily because of the ketchup, so cook it nice and slow over medium heat.
Remember to do a second coat roughly 15-20 min before the chicken is done. I think that's everything... Enjoy!
