Hey all, names Matt and like the title says I'm in Arizona.  Just got a



Char-Griller Smokin' Pro Charcoal Grill

and I'm looking forward to smoking some meat!  Used to have a small vertical that I would use for fish, and occasionally chicken, but that's about the extent of my experience.  Got a friend who does quite a bit of smoking, and the stuff he does with it made me go out and get my own.

Also for those of you new to smoking,  Get a good Probe Thermometer as we smoke by Temperature NOT TIME.
