Here on the West coast/left coast/So Cali, it's drizzling and the ambient temp is 55°. I decided to smoke some peppercorns, garlic cloves with the skin on, coriander seeds, and some salt. I filled 1 1/2 rows with mesquite sawdust in the AMNS, and just let it smoke away. I have found, that for my taste,  more than 2 rows of sawdust gives too heavy a smoke taste, regardless of the type of wood/sawdust I use. Now this has been when I smoke fresh peppers, onions, garlic and cheese. I've uploaded a pic of my morning smoke. It's all good my friend.

Great day here too, 30º now and tomorrow it is supposed to be 21º for a low and 34º for high...

Guess you could also cure without refrigeration too. lol

Finished my cold smoke. You can't see a change in anything other than the salt. I found a lone NM peeper in th garde, so I threw it in for pairing it up with a sandwich.

It's all good my friend.

Looks Great Rich!

How'd those peppercorns turn out?

Do you dry the garlic after it's smoked?

Here's the temp on Sunday morning...4°, but we woke up to -8°

Todd,

The peppercorns took on a nice smokey flavor, I usually use the garlic and salt in making a salsa, the coriander gets toasted then ground for a rub. I wouldn't be out cold smoking in your backyard, there would be one cold but not smoked oldie looking like a historical monument.

It's all good my friend.

That is a great looking smoke Rich. I need to make some time to do that. I love smoked spices

I never would have thought to smoke spices. Are there any rules of thumb as to which spices are better to smoke than others.

I will smoke just about anything once, and most things many times over
