I want to do this.... details on assembly humbly appreciated. oops lazy me google is your friendIt's been over 10 years since I fired up my Lang, and drifted away from smoking meats as other adventures took my time away from tending to a smoker. For my birthday this past year I received a Traeger Pro 575 pellet grill and just completed my first smoke, moinks! The ease of using an electric smoker versus a stick burner was super convenient, and the smoker performed well!
As others have mentioned, the smoke profile from the pellet smoke was very light compared to that of my Lang but nonetheless, it was a tasty smoke.

I absolutely LOVE my Lang and thankful for my buddy pineywoods having his first and showing me the ropes!Looks great! ..... a stick burner is not for everyone.....if you don't want to tend your fire every 40 minutes, it's really not for you....so a more set it and forget it is better for some.
For me, I wanted to get as close to old time BBQ as I could get....that's where the excitement is for me.....that said....I don't like to do brisket often as it is a very tiring endeavor.
