Wanted to say hello, this is Scott from Leland ill. New to your site but have been smoking for about 30 years. Just started cook for party sat. Pulled pork for about 70. Starting off with 5 butt roasts 47.54 lbs. Don't have a big smoker so it takes a little longer.
 
Welcome horseguy to SMF!  Sounds like you've got a nice smoke on your hands and all the experience needed to make it a success.  Keep us posted on how it all turns out.

I put a couple on at a time right on the rack for about 2 hrs, then they go in pans, turn up heat to about 250 for a while. Then drop to about 225 a few hrs, stick for temp then wrap till about 165 internal.

Well, I wound up with 27.63 lbs finished, took the juice made a couple sauces and in 4 hrs almost 15 lbs was gone. The hostess is a close friend so I only had her pay for the meat, about 85 bucks. Around here that would have been at least 300.
