Fired up the mini Friday. Crappy phone didn't capture the TBS as taters were going on.

Having some smoked mashed taters

And a meatloaf. This was an hour into the cook, removed the foil at this point and set directly onto the grate.

Battery died in phone shortly before the loaf was finished so didn't get any finished shots.

Tried my new charcoal basket with a sittin chicken. Apple wood and some homemade bbq rub.

Took the diffuser out to see if I could get the heat up, 260 was the max. The basket worked great but the smoke was A LOT thicker. Forgot to take plate shots. Just started stuffing my face. It was yummy. I think I like the apple wood.

Yep that is the plan. Although the mini is being finicky today and staying around 200 so it maybe more like 4 -2-1.

Got a drip pan under them too. when i foil, potatoes, onion, shrooms and some red wine will go in there.

Those look great. Even the potatoes look good with the fungus.......not a shroom fan, wife loves them.

Thanks. They were tasty for sure. And the advantage of having a vegetarian wife is I get to have the leftovers for a gameday snack!

Be careful, my vegetarian wife converted to a meatatarian after she tried one of my smoked burgers! She still won't eat pork, so it's more ribs for me!
