German bologna or SS, Dont really matter.

Mixing up for 3 lbs 80/20 GChuck.

Maple cure.

Free binder. This is a mix of native potato starch, native carrot fiber and Trehalose.

Mustard seed.

I mixed the seasoning with the maple cure, added the seeds.
Mixed 4T distilled water to the free binder (Add last)

I layer my mix then most times mix by hand for small batches.

Ok ready to go back in fridge for few hours. I'm going to be adding pepper jack to this.

Been a not so good morning already.

Bologna is stuffed....thats good.

The stick burner is pretty easy once you get the venting figured out.

I was not sure the chubs would turn out.
