Former Lurker from Chambersburg, PA

  1. I'm sorry for not introducing myself earlier... I've been gleaning info from this great forum for 6 months or so - been a BBQ fan for years but only recently able to turn out a consistent product myself.

The last pork butt and brisket smokes were big hits w/friends and family. Hearing 'best I've ever tasted' never gets old.

All the info and q-view pics here have helped me get to a B+ level or so and hoping to challenge the A level masters at some point in my future :)

    Thanks to all,
    Dean Martin

Dean, welcome to the Smoking Meat Forum family. Since you've been lurking, you know all about the great tips, tricks and recipes that we have to offer here.

Tells us what kind of smoker you use and be sure to post up some q-view!

    Enjoy!

  3. Thanks - currently just use a Webber Smokey Mountain w/no mods. Am looking to get a BBQ Guru or similar to allow more temp. probes than my little wal-mart digital provides.

I'm doing a pork butt this weekend and smoking a store bought corned beef to try my hand at pastrami (reading a couple of the threads here). I'm always in such a rush to get stuff on the smoker I always forget to take pics... will try to do better.

Here's a couple ribs I did over the summer - I like mine 'memphis dry rub' style with dipping sauce on the side
