Fish Smoker - a noob's question

Hi everyone

Hope I am asking in the right thread. I have recently bought a fish smoker (metal box, two bows with alcohol underneath, wood chips at the bottom, fish on a grid few cm above the wood) and started to play with hot smoking, but I am encountering one rather silly problem. Sometimes at the end of smoking the top of the fish is just sprinkled with the wood chips. Looks like something is causing the wood chips to 'explode' and makes them flying around.

Has anyone some experience / idea about what is causing it and how to prevent it? Apart of enjoying the taste of hickory or Manuka that is.
