Hi all,

I’m from the uk and just got myself a traeger which I love. Excellent brisket and Boston butt so far. In the recipe book that came with it has a recipe for tri tip which is never heard of but my online butchers sell it, so I’m going to give it a go. The temp says to cook at 425 f for about 45 - 50 mins for a 2 lbs piece of meat. That seems really hot! I know it’s not a low and slow cook, but does that seem right to other people?

No you would want to cook it at about 250 average. It will take 45 minutes to maybe 1.5 hours. I doubt it would ever take longer than that. You are just trying to reach 135 internal temp. I pull mine when it reads 133 IT. My offset runs between 250 and 275 for tri tip. 425 would charcoal the thing in 45 minutes. Trust me on this one. 250 will be your sweet spot. You can go lower if you prefer though.

I do tri-tip at 225 to an IT of 132*F. About 90-120 minutes. Cover and rest for 15-20 minutes, slice across the grain into 1/4” slices.

Some go as far as reverse searing the Tri's. Take the IT to 120-125º, then place on a HOT grill and sear a couple of minutes on each side. Pulling when IT hits 130-135º.
