We I was finally able to do my first smoke on the new rig and the ribs turned out great. Because this was the fist run and my first time using lump charcoal and hickory wood I did not purchase the best quality meat incase I had issues but they are still really good looking forward to my next smoke already.

Those ribs look really good. I usually buy what's on sale and figure out the menu from there.

Point for sure.

Looks awesome Wasi. You rocked it for sure. The more you get to know your pit the better the results. I suggest many more frequent smokes. You don't want to lose your touch through lack of effort, lol.

Thanks everyone. All my co-workers said they were night day from the last batch I made on my old MES 30" smoker
with the AMNPS.
 
Once the bed of coals is going good....just needed to add a small split of wood probably every 1/2 hour or so. I don't sweat the exact temps, I just keep it in a range of usually 260 - 280 or so. My OK Joe likes to run in the 280 range.

You don't replenish the coals? Only the wood?
