I finally switched from a gas grill back to charcoal. I’ve never smoked in a kettle, so I had to try it. I used the snake method with cherry wood. 8 hour smoke which stayed right about 250°. I made some of my usual rub but with some heat. After 4 hours I wrapped it. I took it to 203° IT. First time wrapping a shoulder. The bark was mushy. I’ll never do that again. All in all it was pretty darn good. I made some pulled pork sammys with Cole slaw and a mustard sauce.

Looks like it turned out really good. Glad to hear you're back to full flavored grilling and smoking. Looking at the pics, I noticed the absence of a drip pan. I bet you use one next time...

I did my first pulled pork on a kettle last weekend and it was great also. Certainly glad I finally bought one.
 
looks good, i usually wrap b/c my wife and kids dont care for the bark so it makes easier. I used m 22" kettle so much that i got rid of my WSM, then upgraded finally to the 26" and that thing is big. They are so easy to use and clean its nuts. hope you enjoyed it
 
Nice! Great work and technique! Gotta love the Webber kettles, I have two snd use them all of the time despite a Pellet pooper standing next to them.

Yeah it started dripping about the last 2 hours. The dog cleaned up what the charcoal pan didn’t catch.
