first real pork butt

I usually do a loin because thats what we have around. But today we are going to a fathers day cookout so I decided to do a real pork butt and see how it goes.

It is about 7.5 pounds and here is the start of it and it went in the smoker at 8:00 and 2 hours in IT is at 120 degrees.

Butts can take awhile don't be afraid to crank it up if needed!
 
well once again i underestimated the time i had available to cook and it was pulled at 195  and rested for 2 hours. had a great flavor but pulled a little harder than i would want or expect. i also ran it at close to 300 and it never seemed to stall but i did take a nap for an hour or so lol so not sure whats up with that.

The wife pulled plated it before i could get pics so sorry and next time i will be on top of it better lol

I usually run them to 205 and check the bone wiggle. I also only rest butts for about an hour.
Take notes for the next time. That helps me.

i planned on running it at 200-220 but time screwed me lol but for sure next time ill get it right lol
 
so turns out there were a few pics i did not know the wife took. over all the pork was very good and moist and even though i pulled it by hand  i just felt it could have pulled a little better. the third pic is what was left and i pulled it off today so it dont look as good as it did yesterday.

so over all it was good and everybody ate it because there was just a little left lol
