So The CG SP is together and 90% of DeeJay's mods are done, I still need to put in my Aftermarket gauges and my Tuning Plates and Baffles. The gauges should be here somewhere this week, and I'm off to the Hardware store to get the plates tomorrow.
I Also ordered 2 Maverick ET-73s and got a couple of extra probes for them.
Going to be seasoning this bad boy with PAM this week, and getting some pics up. I wanted to share that of all the Mods I did so far the Tires are by far the Most noticable.
Going to be doing my first smoke this Friday, And I'm thinking 2 7LB Butts, 2 Fatties, and 40 ABTs. 1 Butt with Jeff's Rub, and the other with Alton Brown's Rub.
But on a side note I noticed alot of people use Jimmy Deans sausage for their fatties. But are you guys buying Links and cutting them open or what? I was all over the meat locker today pricing stuff and just couldn't figure out what I should use.
I know I want to try one with, Cooper Sharp Cheese, Proscuitto, and Bell Peppers. Wrapped in Slab Bacon
The second one I'm thinking Pizza Fatty, Pepperoni, Mozz, & Ragu. Also wrapped in Slab Bacon. Maybe cook the ragu back into a paste or something. Not sure how wet sauce will affect the fatty.
What do you guys think?
