Didn't want to hijack anyone else's thread.

Mine is a double-smoked butt end ham, with some thin sliced pineapple pieces. And a little apple wood smoke to go with the apple juice in the pan.



Also making fresh asparagus with Hollandaise, mashed potatoes, green salad, and rolls.

This will be my 2-1/2 year old grandson's last Easter as an only child. His brother was supposed to be here 2 weeks ago, but will be induced tomorrow. Unless something happens tonight....

I did some shrimp and andouille jambalaya and a spatchcocked chicken with Jeff's rub.

Smoked a leg of lamb for the wife, kids and myself. It turned out great! Super tender and lots of flavour. Only problem was, it was way too much for the 4 of us!
